Lazy Pierogi Leniwe

Lazy Pierogi are not a true pierogi. They are a mix of cheese and flour that is formed and boiled.

You will need:

1 pound dry curd or farmers cheese or ricotta
3 eggs
1 teaspoon salt
2 cups all-purpose flour

Mix all the ingredients. The mass will be sticky.

Put on a well floured surface and form into a rope about 1 1/2 inches thick.

Cut diagonally into 1 inch pieces.

Boil about 10 minutes. Taste test to be sure they are done.

Either serve immediately or fry.

Serve with sugar and sour cream.
